Hummous & Cheese Twists

Hummous Ingredients

  • 15-oz. can chickpeas, drained, liquid reserved
  • 2 garlic cloves, minced
  • 1 tsp. ground cumin
  • 1 tbsp. olive oil
  • ½ tsp. black pepper

Cheese twists Ingredients

  • 250g puff pastry
  • Tablespoon Tomato purée
  • 30g grated parmesan


  1. Combine chickpeas, garlic, cumin, salt, and olive oil in a food processor.
  2. Blend on low speed, gradually adding reserved chickpea liquid, until desired consistency is achieved.
  3. Serve with crisps and carrot sticks OR Cheese Twists:

Cheese Twists Method

  1. Preheat the oven to gas mark 4 / 180°C. Roll out the pastry until it is about 5mm thick. Cut the pastry into 1cm strips.
  2. Spread the tomato purée onto the pastry strips and sprinkle the cheese.
  3. Make a spiral of each strip by holding the ends and twisting the pastry.
  4. Line a baking tray with greaseproof paper and place all the spirals on it.
  5. Pinch down the ends so that they don’t unravel.
  6. Bake for 10mins until golden brown.
  7. Serve in a tall glass
