Thai Fish Cakes


  • 360g fish, chopped. (salmon / hake / whiting )
  • 1 Tsp mild red chilli pepper
  • Small bunch of coriander
  • 30g fresh ginger, chopped
  • Tsp garlic puree
  • 4 tablespoons cornflour
  • 1 lime, juiced and zested
  • 1 egg
  • 2 tsp vegetable oil
  • Salt and pepper


  1. Put the fish, chilli, coriander, ginger, garlic purée and cornflour in a bowl and mix together.
  2. Add lime juice and zest and then the egg and mix this all together (you might need to use your hands!). You should end up with quite a wet, spoonable mixture.
  3. Brush with oil and bake in the oven until golden brown.
  4. Serve with noodles and sweet chilli sauce.
