Thai Fish Cakes
Ingredients
- 360g fish, chopped. (salmon / hake / whiting )
- 1 Tsp mild red chilli pepper
- Small bunch of coriander
- 30g fresh ginger, chopped
- Tsp garlic puree
- 4 tablespoons cornflour
- 1 lime, juiced and zested
- 1 egg
- 2 tsp vegetable oil
- Salt and pepper
Method
- Put the fish, chilli, coriander, ginger, garlic purée and cornflour in a bowl and mix together.
- Add lime juice and zest and then the egg and mix this all together (you might need to use your hands!). You should end up with quite a wet, spoonable mixture.
- Brush with oil and bake in the oven until golden brown.
- Serve with noodles and sweet chilli sauce.
